Ingredients:

Directions:

  1. Slice jalapenos lengthwise down the middle, remove the seeds and white membrane
  2. Dip the jalapenos in the beaten egg and then dip in cornmeal to coat …….
  3. Deep fry until golden brown ……drain on paper towel
  4. Shred chicken into a bowl, Add mushrooms salt and pepper .. And any other seasoning you want to spice it up….mix well
  5. Stuff the jalapenos with the chicken mixture
  6. Top with cheese and cook in oven or microwave just until cheese is melted…..
  7. Top with salsa .and serve with sour cream…
  8. Makes 5-6 servings ...........
  9. Its quick and easy and very tasty....................
