Oatmeal Shortbread Cookies

Ingredients:

  • 3 cups rolled oats
  • 1 cup packed brown sugar
  • 1 cup butter
  • 3/4 tsp baking soda
  • 1/2 tsp water
  • the original recipe does not call for butterscotch morsels but i add a handful of them.

Directions:

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Dissolve the baking soda in the water.
  3. Combine the flour, oats and brown sugar.
  4. This is when I add a handful of butterscotch morsels, that might be equivalent to 1/2 cup.
  5. Cut in the butter until the mixture resembles coarse crumbs.
  6. Stir in the baking soda mixture and form dough into a ball.
  7. You can either press dough into the bottom of a 9 x 13 inch baking pan or roll dough out to 1/4 inch thick and cut with a cookie cutter. If you roll the dough then I would advise that you omit adding the butterscotch morsels.
  8. Bake at 375 degrees F (190 degrees C) for 12 to 15 minutes.
