Ingredients:

  • 4 eggs
  • 2 tbsp maple syrup
  • 1/2 tsp cinnamon
  • 1 dash salt

Directions:

  1. Grease a 9 inch spring form and preheat oven to 350 degrees (320 if fan assisted).
  2. Divide egg yolks and whites and beat the whites with the salt until stiff peaks form.
  3. Beat together egg yolks, brown sugar and maple syrup.
  4. Fold in ground nuts, cinnamon and flour.
  5. Gently fold in egg whites.
  6. Pour batter into greased spring form and bake at 350 degrees for 30 minutes.
  7. Let cool a bit before removing the rim of the spring form.
  8. Let cool completely before slicing.
