My Very Own Curried Parsnip Soup

Ingredients:

Directions:

  1. Heat butter in large saucepan and fry onion and garlic for 4-5 minutes, until lightly golden.
  2. Stir in spices and cook for 1-2 minutes
  3. Add parsnips and stir until well coated with butter
  4. Stir in curry paste
  5. Stir in stock
  6. Cover pan tightly and simmer for 15 minutes, until parsnips are tender.
  7. Ladle soup into blender and blend until smooth.
  8. Return to pan and stir in milk.
  9. Heat for 2-3 minutes then add 2 tbs sour cream and lemon juice
  10. Season well with salt and pepper
  11. Serve in bowls topped with remaining sour cream and fresh cilanto
  12. Goes great with spicy nan bread!
