  1. Cook bacon until crisp. Remove bacon, reserving bacon drippings. Crumble bacon, and set aside.
  2. Pour 1 tablespoon bacon drippings into a 13- x 9- x 2-inch baking dish; tilt to coat surface. Layer green pepper rings, tomato slices, onion slices, and okra in baking dish. Sprinkle with salt and pepper.
  3. Top vegetables with bacon and breadcrumbs; pour remaining drippings over breadcrumbs. Bake at 325° for 1 hour or until vegetables are tender.
