Ingredients:
6 slices bacon |
6 medium-size green peppers, seeded and sliced into rings |
8 medium tomatoes, peeled and sliced |
4 medium onions, sliced |
2 cups sliced fresh okra |
1/2 teaspoon salt |
1/8 teaspoon pepper |
3 cups soft breadcrumbs |
Directions:
1. Cook bacon until crisp. Remove bacon, reserving bacon drippings. Crumble bacon, and set aside. 2. Pour 1 tablespoon bacon drippings into a 13- x 9- x 2-inch baking dish; tilt to coat surface. Layer green pepper rings, tomato slices, onion slices, and okra in baking dish. Sprinkle with salt and pepper. 3. Top vegetables with bacon and breadcrumbs; pour remaining drippings over breadcrumbs. Bake at 325° for 1 hour or until vegetables are tender. |
