Ingredients:

Directions:

  1. Preheat oven to 350°F.
  2. Saute onions, garlic, serrano pepper in 1 tbsp oil in a small pan until onions are translucent.
  3. Mix the meatloaf ingredients together, mixing in the crackers last until desired consistency (use no more than 1 cup).
  4. Shape the meatloaf mixture into a loaf and place in a lightly greased 9x13 baking dish.
  5. Place meatloaf into oven and set timer for 60 minutes.
  6. Mix sauce ingredients together in a small saucepan, bring to boil and simmer for 5 minutes.
  7. Baste meatloaf with sauce after first 15 minutes of cooking and every 15 minutes afterwards.
  8. Bake meatloaf until internal temperature reaches 155 F (will rise to 160 F after removing from oven), about 45 min to 1 hr of cooking total.
  9. Remove from oven and let rest for 5 minutes before slicing.
  10. Serve meatloaf with remaining sauce.
