My family's variation on meatloaf. Ingredients:
2 lbs ground beef |
1 1/4 ounces lipton onion soup mix |
1/2 cup diced onion |
1 -2 garlic clove, minced |
1/4 teaspoon pepper |
1/2 teaspoon salt |
2 eggs, beaten |
1/3 cup chili sauce |
1 serrano pepper, diced (optional) |
up to 1 cup cracker, crushed |
2/3 cup chili sauce |
3 tablespoons wine vinegar |
2 teaspoons worcestershire sauce |
1/2 cup brown sugar, packed |
1 1/2 teaspoons brown mustard |
Directions:
1. Preheat oven to 350°F. 2. Saute onions, garlic, serrano pepper in 1 tbsp oil in a small pan until onions are translucent. 3. Mix the meatloaf ingredients together, mixing in the crackers last until desired consistency (use no more than 1 cup). 4. Shape the meatloaf mixture into a loaf and place in a lightly greased 9x13 baking dish. 5. Place meatloaf into oven and set timer for 60 minutes. 6. Mix sauce ingredients together in a small saucepan, bring to boil and simmer for 5 minutes. 7. Baste meatloaf with sauce after first 15 minutes of cooking and every 15 minutes afterwards. 8. Bake meatloaf until internal temperature reaches 155 F (will rise to 160 F after removing from oven), about 45 min to 1 hr of cooking total. 9. Remove from oven and let rest for 5 minutes before slicing. 10. Serve meatloaf with remaining sauce. |
