Ingredients:

  • 3 tbsp baking drippings or shortening
  • 1 cup cornmeal
  • 1/2 cup flour
  • 1 tsp salt
  • 2 eggs
  • 1 1/2 cups buttermilk
  • 1 tbsp cornmeal

Directions:

  1. Preheat oven to 425 degrees F.
  2. Put the grease or shortening in a well seasoned 9 cast iron skillet and put it in the oven till sizzling.
  3. Combine the dry ingredients. Add beaten eggs one at a time to the dry ingredients. Slowly pour your buttermilk into the mixture. It should have a pancake batter like consistency. Not to thin, but not to thick either.
  4. Take the hot skillet and sprinkle about 1 tbsp of cornmeal on the bottom. I don't know why my Maw Maw does this so I do it too.
  5. Pour the batter into the hot skillet.
  6. Put back in the oven and bake for 20 to 25 minutes until nice and brown on top. I usually check with a knife to make sure it is done all the way through.
