Maw Maws Southern Cornbread |

Well I don't measure and either does my Maw Maw so I translated this as best as I could remember. This is her recipe which she got from her grandmother. So it's been in our family since at least the early 1900's. Ingredients:
3 tbsp baking drippings or shortening |
1 cup cornmeal |
1/2 cup flour |
1 tbsp baking powder |
1 tsp baking soda |
1 tsp salt |
2 eggs |
1 1/2 cups buttermilk |
1 tbsp cornmeal |
Directions:
1. Preheat oven to 425 degrees F. 2. Put the grease or shortening in a well seasoned 9 cast iron skillet and put it in the oven till sizzling. 3. Combine the dry ingredients. Add beaten eggs one at a time to the dry ingredients. Slowly pour your buttermilk into the mixture. It should have a pancake batter like consistency. Not to thin, but not to thick either. 4. Take the hot skillet and sprinkle about 1 tbsp of cornmeal on the bottom. I don't know why my Maw Maw does this so I do it too. 5. Pour the batter into the hot skillet. 6. Put back in the oven and bake for 20 to 25 minutes until nice and brown on top. I usually check with a knife to make sure it is done all the way through. |
