Ingredients:

Directions:

  1. Cut an x in the bottom of the tomatoes; core.
  2. Place in boiling water, leave in water until skin starts to pull away, remove from boiling water and put in cold water.
  3. Skin tomato and cut in halfway across the middle.
  4. Squeeze tomato to remove seeds.
  5. Dice tomato into 1/2-inch pieces.
  6. Heat oil and garlic in medium skillet.
  7. Add tomatoes and simmer for 30 minutes.
  8. Add basil and parsley; heat for 5 more minutes.
  9. Serve over pasta.
