Ingredients:

Directions:

  1. Preheat oven to 400°F.
  2. Prepare muffin tins. (I prefer using paper baking cups.)
  3. In large bowl, combine dry ingredients (flour, sugar, baking powder, baking soda and salt).
  4. In small bowl, combine wet ingredients (orange juice, zest, oil, vanilla, yogurt and egg) and whisk together until well blended.
  5. Create a 'well' in the centre of the dry ingredients.
  6. Add wet ingredients to dry ingredients (pour wet ingredients into the well); stir with a fork just until mixtures are combined. Do not over-stir.
  7. Gently fold in blueberries.
  8. Spoon batter into 12 muffin cups.
  9. Sprinkle each muffin with a wee bit of sugar.
  10. Bake at 400°F for 18 minutes or until the muffins spring back when lightly touched. Remove muffins from pans immediately, and place on a wire rack to cool.
