Ingredients:

Directions:

  1. Cook pasta according to directions and drain. Preheat oven to 400°F.
  2. Meanwhile, cook the diced onion over low heat in the olive oil until just transparent. Add the flour and stir to thicken, about 2 minutes.
  3. Add the Dijon mustard and the chipotles and a bit of the adobo sauce and then remove pan from heat.
  4. Stir in the milk and return the pan to the stove. Heat until just boiling and then remove pan once again to stir in the cheese.
  5. Combine the cooked, drained pasta and the sauce in a casserole and bake, uncovered for about 30 minutes or until bubbling.
