Ingredients:

  • 1 tbsp olive oil
  • 1 medium onion
  • 2 garlic cloves
  • 1 tsp cumin
  • 1/2 tsp turmeric
  • 1/2 tsp ground ginger
  • 5 1/4 oz. lentils
  • 2 medium carrots
  • 1 medium sweet potato
  • 2 1/2 oz. frozen peas

Directions:

  1. Heat oil in a large sauce pan and cook onion and garlic until softened but not colored
  2. Add cumin, turmeric, and ginger and cook for two minutes
  3. Stir in lentils carrots and sweet potato. Add 3 3/4 c. cold water. Boil 12-15 minutes
  4. Add the beans and peas and cook 5 more minutes stirring occasionally until lentils are soft and vegetables are tender.
