Ingredients:

  • at least 2 cups of all purpose flour
  • oil for deep frying

Directions:

  1. Mix the flour and parmesan cheese together in a big mixing bowl. Add enough Buttermilk to make the flour form a sticky ball. You will have to eyeball it...a little milk goes a long way!
  2. Flour your hands and sprinkle more flour on the dour and start kneading the dough. You can do this either in the bowl or on a flat surface. Just keep rolling it into a ball, occasionally adding more flour to keep it from sticking to you or the surface.
  3. Let the ball of dough sit for about 15 minutes, covered by a clean dish towel. Many return it to the bowl and then cover with a towel.
  4. Heat oil in deep fryer or or wide pan.
  5. Take a handful of dough and flatten slightly. DO NOT use a rolling pin! Too flat and it will be tough. A good rule of thumb, it should be the size of your palm or just a hair bigger.
  6. Be careful when you put it into the grease, it will sizzle.
  7. Its easier to cook one or two at a time. Watch closely because they cook very fast, a couple of minutes max.
  8. One minute, then its time to use a metal spatula and fork to turn it over to cook the other side. They will be bumpy. Are done when light tan color.
