  1. Heat 1 tbsp oil in a large saucepan over medium heat. Add ground meat, all but 2 tbsp of scallions, garlic and ginger, and cook, stirring and breaking up the meat till no longer pink, about 5 min. Transfer to a plate.
  2. Add broth, water, bok choy, noodles, soy sauce, vinegar and the remaining 1 tbsp of oil to the pan. Bring to a boil over medium-high. Cook, stirring occasionally till noodles are tender, 3-5 min. Return turkey mixture to pan and stir to combine. Garnish with scallions and cucumber.
