Ingredients:
2 tablespoon(s) hot sesame oil, divided |
1 pound(s) lean ground turkey or pork |
1 bunch(es) scallions sliced, divided |
2 clove(s) garlic minced |
1 tablespoon(s) fresh ginger minced |
4 cup(s) reduced sodium chicken broth |
3/4 cup(s) water |
3 cup(s) bok choy thinly sliced |
8 ounce(s) dried chinese noodles |
3 tablespoon(s) reduced sodium soy sauce |
1 tablespoon(s) rice vinegar |
1 bag(s) cucumber sliced into matchsticks |
Directions:
1. Heat 1 tbsp oil in a large saucepan over medium heat. Add ground meat, all but 2 tbsp of scallions, garlic and ginger, and cook, stirring and breaking up the meat till no longer pink, about 5 min. Transfer to a plate. 2. Add broth, water, bok choy, noodles, soy sauce, vinegar and the remaining 1 tbsp of oil to the pan. Bring to a boil over medium-high. Cook, stirring occasionally till noodles are tender, 3-5 min. Return turkey mixture to pan and stir to combine. Garnish with scallions and cucumber. |
