Ingredients:

  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/2 tsp vanilla
  • 1 1/2 cup flour
  • 1/4 cup melted butter
  • 3/4 cup sugar
  • 1 egg
  • 1 tsp vanilla

Directions:

  1. Preheat oven to 375 degrees
  2. Combine 1st 4 ingredients together and press into a 9x9 ungreased glass dish - bake for 15 minutes. Cool.
  3. Spread pineapple (well drained) on cooled bottom layer.
  4. Beat together melted butter, 3/4 cup sugar, egg, vanilla and coconut
  5. Spread coconut mixture over pineapple layer and bake for 30 minutes.
