Ingredients:

Directions:

  1. Soak the bean in water overnight.
  2. Drain beans then place in a large pot with 7 cups of cold water.
  3. Add all the veggies and cook for 1 hour or until everything is tender.
  4. Add the olive oil and salt and pepper.
  5. Cook for another 10- 15 minutes.
  6. Serve.
