Gingerbread Pancakes

Ingredients:

  • 1/4 tsp salt
  • 3 tbsp packed brown sugar
  • 1/2 tsp grd. ginger
  • 1/2 tsp cinnamon
  • 1/8 tsp allspice
  • 2 tsp instant coffee , disolved in 1/4 cup boiling water and cooled
  • 2/3 cup milk
  • 1 egg
  • 1 tbsp oil

Directions:

  1. In a med. bowl, Sift together dry ingredients.
  2. In a large bowl beat together wet ingredients.
  3. Mix dry in with wet ingredients, until just moistened. DO NOT OVERMIX!
  4. Pour 1/4 cup batter onto a hot, greased griddle.
  5. Flip when bubbles form along edges.
  6. Serve with maple syrup. Yum!
