Ingredients:

Directions:

  1. Heat oil in a skillet over medium-high heat.
  2. Add potatoes and salt, and cook until just beginning to turn brown.
  3. Add onion.
  4. Cook until onion begins to turn translucent.
  5. Add tomatoes and cook for a few minutes.
  6. Add jalapenos and water.
  7. Reduce heat to medium.
  8. Cover and cook until potatoes are tender and moist, about 15 minutes.
  9. If there is too much liquid, uncover and cook for a few minutes more.
  10. Cover and set aside for 30 minutes before serving.
