Ingredients:

Directions:

  1. Brown the ground beef with the chopped onion and drain the fat.
  2. Add taco seasoning and cook according to package directions, adding proper amount of water. If you make your own taco seasoning (I use Bulk Taco Seasoning Mix), use 2 Tbsp, and 1/3-1/2 cup water, and cook until the water is mostly evaporated.
  3. Add the corn kernels to the meat mixture and cook until thawed and heated through.
  4. Put salad greens into a deep bowl. Add hot beef over the greens, top with 1 cup shredded cheese.
  5. Cook refried beans on stove until hot. Add 1 cup cheese and 1 cup salsa. Stir until combined.
  6. Pour beans over ground beef and cheese in dish.
  7. Sprinkle green onions, black olives (if you choose), tomatoes and crushed chips on top.
