  1. Cut nice 1/2 -1-inch slices of eggplant
  2. Put on a baking sheet
  3. Rub a little olive oil on them
  4. Rub some garlic on them
  5. Pop them into a 400' oven
  6. When they are tender
  7. Add to each ..spices of choice, a thick slice of tomato, a basil leaf and a thick slice of mozzarella
  8. Pop back in the oven until the tomato is warmed through and the mozzarella is melted..
