I came up with this one night when I wanted eggplant parm... but was just too tired to make it...add spices to suit your taste. cooking time is approx.
Ingredients:
eggplant cut into slices
fresh ripe large tomatoes
fresh basil leaves
herbs of your choice
garlic
mozzarella
Directions:
1. cut nice 1/2 -1-inch slices of eggplant
2. put on a baking sheet
3. rub a little olive oil on them
4. rub some garlic on them
5. pop them into a 400' oven
6. when they are tender
7. add to each ..spices of choice, a thick slice of tomato, a basil leaf and a thick slice of mozzarella
8. pop back in the oven until the tomato is warmed through and the mozzarella is melted..
