Ingredients:

Directions:

  1. Wash peppers thoroughly.
  2. Cut tops off and remove seeds and ribs from inside (you can discard the tops if you like).
  3. Place peppers on a grill pan and cook until they have grill marks on the outside (this helps to cut down on the raw flavor of the pepper and gives it more of a roasted taste)>
  4. Cook rice as directed on box.
  5. Mix rice, salsa and chorizo. Spoon into peppers.
  6. Top with cheese and broil for 25 minutes or until cheese is brown and bubbly.
