Ingredients:

Directions:

  1. Set oven to 350 °F.
  2. Generously grease a 8 or 9-inch square glass baking dish or a 9-inch glass pie plate (or double the complete recipe and bake in a 13 x 9-inch glass pan).
  3. For topping; in a bowl mix together the cornflake crumbs with cinnamon and 1-2 tablespoons brown sugar; set aside.
  4. For the base; process the butter with sugar and egg for 1 minute, scraping down sides of the bowl if necessary.
  5. Add in dry ingredients and process just until the dough begins to form a ball around the blades (about 10 seconds).
  6. Pat the mixture into prepared baking dish.
  7. For the filling; process the dry cottage cheese in the processor for 15 seconds.
  8. Add in eggs, sugar and pinch salt, process 15 seconds longer.
  9. Dissolve the cornstarch in milk until smooth and combined then pour through the feed tube while machine is running; process for 10 seconds longer or until well mixed.
  10. Pour over the base and then sprinkle with reserved cornflake topping.
  11. Bake for 1 hour or until a knife inserted in the middle comes out clean.
  12. Delicious!
