Dad's Potato Soup

Ingredients:

  • 4 large potatoes
  • 2 tsp olive oil or 2 tsp bacon grease
  • 2 cups milk
  • 1/4 cup sour cream
  • 4 slices bacon (cooked )

Directions:

  1. Peel onions and dice.
  2. In a large sauce pan, saute onions in olive oil or bacon grease until translucent.
  3. Peel potatoes and dice.
  4. Add potatoes and chicken broth to onions.
  5. Bring to a boil, reduce heat and cook until potatoes are tender (30-45 minutes).
  6. Add sour cream, milk.
  7. Break bacon into one or two inch parts and add to pan.
  8. Return to a boil, then simmer 30 minutes.
