Cranberry Rum Relish

Ingredients:

Directions:

  1. Prepare jars, lids and bands.
  2. Combine rum, shallots and orange rind in a medium saucepan.
  3. Bring to a boil over high heat, reduce heat and simmer for a few minutes until rum has reduced and mixture is a syrupy glaze.
  4. Add cranberries and sugar. Stirring constantly, cook until cranberries
  5. Pop and sugar dissolves. Remove from heat and stir in pepper.
  6. Ladle hot relish into prepared jars leaving a 1/2 headspace.
  7. Check for air bubbles and adjust headspace if needed by adding more relish.
  8. Process half pints for 10 minutes and pints for 15 minutes in a boiling
  9. Water bath. Adjust time according to your altitude.
