Cinnamon-Raisin Rice Pudding

Ingredients:

  • 1 egg
  • 1/2 cup water
  • 1/4 cup sugar
  • 1/4 tsp ground nutmeg
  • 1/4 cup raisins

Directions:

  1. In a small bowl, whisk the first seven ingredients. Stir in the rice, pecans and raisins. Pour into two greased 10-oz. ramekins or custard cups. Place ramekins on a baking sheet.
  2. Bake, uncovered, at 350° for 35-40 minutes or until a knife inserted near the center comes out clean. Yield: 2 servings.
