Ingredients:

Directions:

  1. In a large bowl, toss the sweet potatoes with oil, salt and pepper. Transfer to a greased 15-in. x 10-in. x 1-in. baking pan. Bake at 425° for 35-40 minutes or until tender.
  2. In a small bowl, combine the cilantro, lime juice and garlic; add to sweet potatoes and toss to coat. Serve immediately. Yield: 9 servings.
