Chocolate Chip Yogurt Muffins

Ingredients:

  • 1 tsp salt
  • 2/3 cup sugar
  • 1/2 cup oil
  • 4 large eggs
  • 1 1/2 cups milk
  • 2 tbsp corn syrup
  • 1 (12 oz) bag chocolate chips

Directions:

  1. Preheat oven to 350 degrees F. Line muffin tin with cupcake liners or spray with nonstick cooking spray. Stir together dry ingredients(flour, baking powder, salt, sugar). In another bowl, mix wet ingredients together with an electric mixer(oil, yogurt, eggs, milk, corn syrup, vanilla extract). Fold wet ingredients into dry until just combined. Do not overmix. Fold in chocolate chips. Fill each muffin cup with 1/3 cup batter. Bake 28 to 30 minutes or until golden brown on top.
