Chocolate Chip Yogurt Muffins |

Perfect if you need a snack for you childs class because it makes 24 muffins! Very moist and the top is nice and crispy! Ingredients:
4 cups all-purpose flour |
2 tablespoons baking powder |
1 teaspoon salt |
2/3 cup sugar |
1/2 cup oil |
2/3 cup vanilla yogurt |
4 large eggs |
1 1/2 cups milk |
2 tablespoons corn syrup |
1 teaspoon vanilla extract |
1 (12 ounce) bag chocolate chips |
Directions:
1. Preheat oven to 350 degrees F. Line muffin tin with cupcake liners or spray with nonstick cooking spray. Stir together dry ingredients(flour, baking powder, salt, sugar). In another bowl, mix wet ingredients together with an electric mixer(oil, yogurt, eggs, milk, corn syrup, vanilla extract). Fold wet ingredients into dry until just combined. Do not overmix. Fold in chocolate chips. Fill each muffin cup with 1/3 cup batter. Bake 28 to 30 minutes or until golden brown on top. |
