Chicken Skewers With Avocado Sauce

Ingredients:

Directions:

  1. 1. Flatten chicken to 1/4 thickness;cut lengthwise into 16 1 wide strips. In resealable bag,combine the lime juice,vinegar,chipotle pepper and salt;add the chicken.Seal and turn to coat;refrigerate for 30 min.
  2. 2. Meanwhile,for sauce,place remaining ingredients in food processor,cover and process until blended. Transfer to serving bow,cover and refrigerate till serving.
  3. 3. Drain chicken and discard marinade. Thread meat onto 4 metalor soaked wooden skewers. Oil the grill grates lightly with moistened paper towel.
  4. Grill,covered,over med. heat or broil 4' from heat for 8-12 mins or till no longer pink,turning frequently. Serve with sauce.
