Ingredients:

  • 2 cups chicpeas
  • 1 medium potato (cooked )
  • 1/3 cup cilantro
  • 1 tsp coriander
  • 1 tsp cumin
  • 1 tsp salt
  • 2/3 cup peppers

Directions:

  1. Pre-heat oven 400' F
  2. In a food processor blend potato, cilantro, and scallions and spices - set aside when done
  3. Use processor to chop pepper - set aside
  4. Add one cup of the chic peas and blend until it is like bread crumbs - set a side
  5. Add the other cup of chic peas and blend until it is a smooth paste
  6. Combine all ingredients and shape in to patties. Place these on a oil cooking sheet. Spray tops with oil. Cook for 12 minute in oven. Respray tops with oil and then flip. Cook for another 12 minutes. Cool slightly and serve with salad fixings, tortillas or low carb pitas and dressing
