Carrot Rice with Peanuts

Ingredients:

  • 1 cup long- grain rice
  • 2 cups water
  • 1 tbsp butter
  • 1 onion, sliced thinly
  • 1 tsp gingerroot, minced
  • 3/4 cup grated carrot

Directions:

  1. Combine rice and water in a medium saucepan.
  2. Bring to a boil over high heat.
  3. Reduce heat to low, cover with lid, and allow to steam until tender/cooked (about 20 minutes).
  4. While rice is cooking, pulverize peanuts in a blender and set aside.
  5. Melt butter in a large skillet over medium-high heat.
  6. Saute onions until golden brown.
  7. Stir in ginger, carrots, and salt to taste.
  8. Reduce heat to low and cover to steam 5 minutes.
  9. Stir in pepper and peanuts.
  10. When rice is done, add it to the skillet and stir gently to combine with other ingredients.
  11. Garnish with chopped cilantro and serve hot.
