Carrot And Parsnips Julienne

Ingredients:

  • 1 1/2 lbs. of parsnips, peeled and cut in sticks
  • equal amount of carrots, peeled and cut in sticks
  • 1 stick of butter ( hey , paula)
  • 1/2 cup of light brown sugar
  • 1/2 tsp of nutmeg
  • couple grinds of fresh black pepper
  • 3/4 cup of chicken stock
  • some fresh chopped parsley for garnish

Directions:

  1. Preheat oven to 350 degrees
  2. In large casserole, tumble in the carrots and parsnips.
  3. Dot the top with butter.
  4. Sprinkle with the sugar, nutmeg, orange rind and pepper.
  5. Pour the stock around.
  6. Cover with foil.
  7. Bake 30 minutes, shake once in a while to make sure nothing is sticking. Poke with a fork, if tender then they are done, if not tender, cover back up and cook ten minutes more.
  8. Serve sprinkle with parsley and if you like a squeeze of fresh lemon juice.
