Bulgur Pilaf with Mushrooms

Ingredients:

Directions:

  1. Combine the bulgur and stock in a bowl and let soak until tender, approximately 45 minutes.
  2. After soaking, place the bulgur in a sieve and let the excess stock drain off.
  3. In a medium skillet, use 1 tablespoon of the olive oil; sauté the mushrooms until well browned, about 10 minutes.
  4. In a large skillet, use remaining olive oil and sauté the onion until tender but not browned, about 5 minutes. Add the bulgur and thyme and heat thoroughly. Add the mushrooms and season to taste. Serve hot.
