Bulgur Pilaf with Mushrooms |

Similar to a rice side, but MUCH healthier! Ingredients:
1 cup bulgur |
6 mushrooms, trimmed and sliced |
1 cup warm veal or beef stock |
1 large onion, peeled and finely minced |
2 tbsp olive oil |
1 tbsp. fresh thyme |
1 salt and black pepper |
Directions:
1. Combine the bulgur and stock in a bowl and let soak until tender, approximately 45 minutes. 2. After soaking, place the bulgur in a sieve and let the excess stock drain off. 3. In a medium skillet, use 1 tablespoon of the olive oil; sauté the mushrooms until well browned, about 10 minutes. 4. In a large skillet, use remaining olive oil and sauté the onion until tender but not browned, about 5 minutes. Add the bulgur and thyme and heat thoroughly. Add the mushrooms and season to taste. Serve hot. |
