Ingredients:

  1. Place a nonstick skillet over medium-high heat until it is hot enough for a spritz of water to sizzle on it.
  2. With an oven mitt, briefly remove the pan from the heat to mist lightly with olive oil spray. Also mist a medium microwaveble bowl with olive oil spray
  3. Add the green pepper and onion. Cook for 3 to 5 minutes, until tender, stirring occasionally.
  4. Add the tomato. Cook for about 1 minute, or until just warm.
  5. Set aside.
  6. Meanwhile, lightly mist a medium microwaveble bowl with olive oil spray. Add the egg whites. Microwave on low power for 30 seconds at a time until the eggs are slightly runny on top.
  7. Stir with a fork to break them into large pieces. If they still appear undercooked, microwave for 10 second intervals until set.
  8. Stir in vegetable mix.
  9. Season with salt and pepper, and serve immediately.
