Boxty (irish Potato Griddle Cakes)

Ingredients:

  • 1/2 lb raw potatoes
  • 1/2 lb plain flour
  • 1 tbsp milk , more as needed
  • 1 egg
  • salt and pepper

Directions:

  1. Grate raw potatoes and mix with the cooked mashed potatoes.
  2. Add salt, pepper and flour.
  3. Beat egg and add to mixture with just enough milk to make a batter that will drop from a spoon.
  4. Drop by tablespoonfuls onto a hot griddle or frying pan.
  5. Cook over a moderate heat for 3-4 minutes on each side.
