Blackberry Wine Cake

Ingredients:

  • 1 cup oil
  • 4 eggs
  • 1 (3 oz) box sparkling wild berry jello (regular or sugar free)
  • 3 -4 tbsp blackberry wine

Directions:

  1. Mix all ingredients together.
  2. Place in Pam-sprayed bundt pan.
  3. Bake at 350° for 40-45 minutes.
  4. Remove from pan to cake plate.
  5. While cake is still warm, mix glaze ingredients and pour glaze over cake.
  6. *Optional:Before adding glaze you may pour some of the wine over the cake first (slowly).
  7. This allows cake to take on a stronger blackberry flavor.
  8. Then add glaze.
  9. Garnish with fresh or frozen blackberries, if desired.
  10. For added flavor, soak berries in a bit of wine and powdered sugar before garnishing.
