Beat the Heat: No-Bake Berry Tiramisu

Ingredients:

  • 2 cups espresso
  • 2 tbsp rum
  • 1 1/2 cups heavy cream
  • 1/2 cup confectioners' sugar
  • 1 tsp vanilla
  • 2 cups berries

Directions:

  1. Ently wash fresh berries with cold water, allow them to air-dry on a paper towel.
  2. Whip heavy cream + powdered sugar + vanilla until soft peaks form.
  3. Brew espresso, add rum, combine in a shallow dish.
  4. Dip ladyfingers into espresso/rum and arrange neatly onto serving dish.
  5. Gently spoon whipped cream mixture and sprinkles some berries.
  6. Repeat this process until you've reached the top of the dish.
  7. Top with fresh berries, cover with plastic wrap and chill in fridge until ready to serve.
  8. Just before serving,.
  9. Dust with good quality cocoa or sprinkle some curly chocolate shavings.
  10. And make your grand entrance.
  11. Oh, and keep 911 on speed dial in case someone faints.
