Basic Southern Potatoe Salad

Ingredients:

Directions:

  1. Cut up you potatoes and bring to a boil, boiling only until slightly forkable do not over cook or you will have (mashed potatoe salad)
  2. When potatoes are done, put into a colander and rinse until completely cooled under gentle running cold tap water
  3. Then in a medium sized mixing bowl add all of the other ingredients (except for the eggs) and mix together until smooth
  4. Now add the potatoes and the chopped
  5. Eggs and fold into all of the other ingredients gently not to break apart the potatoes...i like to mix it by hand, using my hands...
  6. Then put into a nice serving dish and sprinkle with paprika and parsley to garnish and serve right away or refrigerate for 1 hour
