Ingredients:

Directions:

  1. Preheat oven to 400 degrees F.
  2. Grease or paper line 12 (2 1/2 in) muffin cups.
  3. Mix together egg replacer powder and water. Set aside.
  4. Combine cereal, banana, milk, 'egg,' and oil in medium bowl; mix well.
  5. Let stand 5 minutes; stir to break up cereal.
  6. Combine flour, sugar, baking powder, baking soda and cinnamon in a large bowl.
  7. Add cereal and banana mixture all at once to flour mixture, stirring just until moistened.
  8. Divide evenly among muffin cups.
  9. Bake 20-25 minutes or until tester inserted comes out clean.
