Baked Potatoes With a  Spicy Filling

Ingredients:

Directions:

  1. Preheat the oven to 400°. Scrub the potatoes and pat dry. Prick all over with a fork, brush with oil if you are using it and season with salt and pepper.
  2. Place the potatoes on a cookie sheet and bake for 1 1/2 hours or until cooked through. Cool for 10 minutes.
  3. Meanwhile, mash the garbanzo beans with a fork or potato masher. Stir in the spices and half the chopped cilantro. Cover and set aside.
  4. Halve the cooked potatoes and scoop the flesh into bowl keeping the potato shells intact. Mash the flesh until smooth and gently mix into the garbanzo bean mixture with the yogurt. Season well with salt and pepper.
  5. Fill the potato shells with the potato/garbanzo bean mixture and place on a cookie sheet. Return the potatoes to the oven and bake for 10-15 minutes longer, until heated through.
  6. Serve sprinkled with the remaining chopped cilantro.
