Baked Cinnamon Pie Extraordinaire

Ingredients:

Directions:

  1. Break eggs in a med. size bowl and whip with a wire whip to scramble
  2. Add 2 cups milk and blend, set aside.
  3. Blend dry ingredients:
  4. 1/2 c. flour
  5. 1 cup sugar
  6. 2 teas. cinnamon
  7. Stir dry ingredients into milk and egg mixture.
  8. Add vanilla, beat with wire whip until frothy.
  9. Pour into prepared pie shell. Dot with the stick of margarine.
  10. Place in oven and bake for 15 minutes at 350. After 15 minutes pull out oven rack and stir pie GENTLY, trying not to puncture bottom crust. This step is to mix the margarine into the other ingredients after it has melted.
  11. Bake another 15 minutes at 350.
  12. Turn oven to 300 degrees and continue cooking another 30 minutes. Total baking time will take an hour.
  13. *If edge of crust is getting too brown and the pie has not set, put foil around it, covering the crust edge.
  14. Store remainder in refrigerator.
  15. This is best served warm, and is great with whipped cream or ice cream when warm.
  16. It can always be popped into the microwave to reheat and eat the left overs....but, believe me, there won't be any left overs....it is delicious!
