Ingredients:

  • 1 lb bacon, cut into 1 inch pieces (don'tsp worry about separating them, they'll do that on their own when they cook)
  • 1 tbsp butter
  • 1/2 tsp salt (to taste)

Directions:

  1. Prepare and wash the beans, and blanch them in a large pot of boiling water for one minute. Drain and set aside.
  2. Melt the butter in a small skillet over medium heat. Toast the almonds until just golden, about two minutes.
  3. In a large skillet, cook the bacon chunks over medium high heat until not quite crispy, about 4-5 minutes. Drain on paper towels and discard the rendered grease, reserving about 1 tbsp in the skillet.
  4. Add the garlic and lemon juice to the bacon grease and sautee for one minute.
  5. Add the beans, salt and pepper, turning to coat.
  6. On a large platter, arrange the beans. Cover with the bacon pieces and sprinkle with the toasted almonds. Serve immediately.
