1940s One Egg Orange Cake

Ingredients:

  • 1 egg orange cake
  • makes 16 servings
  • jean springer and eileen van ort sent in this recipe which was popular in 1944 when eggs were scarce due to world war ii.
  • 2 cups sifted cake flour
  • 2 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tsp vanilla
  • 1 large egg
  • 1/4 cup orange juice
  • 1/2 tsp orange rind
  • 1 cup sifted confectioners'' sugar

Directions:

  1. Grease an 8-by-8-inch or 9-by-9-inch baking pan.
  2. Heat oven to 350 degrees.
  3. Sift flour, baking powder and salt into a mixing bowl.
  4. Add shortening, vanilla and 2/3 cup milk.
  5. Beat on medium speed for 2 minutes.
  6. Add remaining milk and egg and beat 2 more minutes.
  7. Pour into greased pan.
  8. Bake 30 to 35 minutes.
  9. Meanwhile, mix orange juice, orange rind and confectioners’ sugar in a medium saucepan.
  10. Let stand on stove over low heat, stirring occasionally.
  11. When cake is finished baking, prick holes in cake to bottom and pour warm glaze over top.
  12. Let cool before serving.
