Ffrom the 1940's when eggs were scarce and homemakers could make this delectible small cake with orange glaze Ingredients:

2 cups sifted cake flour |
2 1/2 teaspoons baking powder |
1 teaspoon salt |
1/3 cup soft shortening |
1 teaspoon vanilla |
1 cup milk, divided |
1 large egg |
1/4 cup orange juice |
1/2 teaspoon orange rind |
1 cup sifted confectioners’ sugar |
Directions:
1. Grease an 8-by-8-inch or 9-by-9-inch baking pan. 2. Heat oven to 350 degrees. 3. Sift flour, baking powder and salt into a mixing bowl. 4. Add shortening, vanilla and 2/3 cup milk. 5. Beat on medium speed for 2 minutes. 6. Add remaining milk and egg and beat 2 more minutes. 7. Pour into greased pan. 8. Bake 30 to 35 minutes. 9. Meanwhile, mix orange juice, orange rind and confectioners’ sugar in a medium saucepan. 10. Let stand on stove over low heat, stirring occasionally. 11. When cake is finished baking, prick holes in cake to bottom and pour warm glaze over top. 12. Let cool before serving. |
