Zucchini Nut Bread

Ingredients:

  • 3 eggs
  • 1 tsp salt
  • 1 cup salad oil
  • 2 cups sugar
  • 1 tbsp cinnamon
  • 1/2 tsp baking powder
  • 3 tsp vanilla
  • 1/2 cup nuts
  • 3 cups flour

Directions:

  1. Mix together eggs, oil and sugar.
  2. Add zucchini and vanilla.
  3. Sift together dry ingredients.
  4. Add slowly to zucchini mixture.
  5. Stir in nuts.
  6. Pour into greased loaf pans (2).
  7. Bake at 325 degrees F for 1 hour.
